How to Cook Mushrooms to Optimize Nutritional Content

They are high in vitamin D, boost immune system function, fight inflammation and reduce risk of cardiovascular disease.Recent research published in International Journal of Food Sciences and Nutrition described two bst way to improve th nutriotional benfits of mushrooms while cooking them. The study include such mushrooms as button, shiitake, oyster. It was found that when grilled or microwaved mushrooms retain helthy compounds.  When fried, mushrooms lose a lot of protein, ash, and carbohydrate content but bump up fat and energy. If you boil the fungus, it improves the beta-glucan content, which is linked to immune system health, but losses in antioxidant content."When mushrooms were cooked by microwave or grill, the content of polyphenol and antioxidant activity increased significantly, and there are no significant losses in nutritional value of the cooked mushrooms," said study co-author Irene Roncero, Ph.D.
