Eating Ultra-processed Foods Linked to Inflammation and IBD

A new international study, conducted by researchers from McMaster University in Hamilton, Canada, finds that eating ultra-processed foods on a regular basis is associated with inflammation and inflammatory bowel disease (IBD).Eating Ultra-processed Foods Often Linked to Inflammation and IBD

For the study, a team of scientists, led by Neeraj Narula, M.D., an assistant professor of medicine, analyzed the medical data of more than 116,000 adults aged between 35 and 70 years. The participants, who belonged to 21 low, middle, and high-income nations across North America, South America, Europe, Africa, Middle East, South Asia, Southeast Asia, and China, had to complete food frequency questionnaires at least every 3 years from 2003 to 2016.

The analysis showed that higher consumption of ultra-processed foods and beverages increases the likelihood of developing IBD. But high consumption of ultra-processed foods was linked to a higher incidence of IBD, consumption of the same foods in unprocessed form did not carry the same risks – the researchers conclude that the risk of IBD is associated with the way the food is cooked.
