Just One Cup of Leafy Green Vegetables per Day Could Boost Muscle Function

A new study, conducted by researchers from Edith Cowan University (ECU) in Australia, finds that people who eat at least one cup of leafy green vegetables every day have significantly better muscle function in their lower limbs.Just One Cup of Leafy Green Vegetables per Day Could Boost Muscle Function

For their study, a team of researchers analyzed data from 3,759 Australians taking part in Melbourne's Baker Heart and Diabetes Institute AusDiab study over a 12-year period.

The analysis showed that people with the highest regular nitrate consumption had 11% stronger lower limb strength compared to those with the lowest nitrate intake. People who ate a lot of leafy greens also showed up to 4% faster walking speeds.

The lead author of the study Dr. Marc Sim from ECU's Institute for Nutrition Research says: “Our study has shown that diets high in nitrate-rich vegetables may bolster your muscle strength independently of any physical activity. Nevertheless, to optimize muscle function we propose that a balanced diet rich in green leafy vegetables in combination with regular exercise, including weight training, is ideal.”
