In their study, the researchers found that supplementation with red cabbage microgreens or mature red cabbage reduced weight gain caused by high-fat diet. These greens also cut LDL cholesterol levels in the liver.
Scientists found that the red cabbage microgreens contained higher levels of polyphenols and glucosinolates (compounds that are able to decrease cholesterol) than regular cabbage. Having analysed the results of their study, the researchers concluded that red cabbage microgreens may be more beneficial for health than mature red cabbage.
