Copper is an important nutrient as it helps form collagen, increases the absorption of iron and supports neurodevelopment. At the same time, too much of it can put you at risk of copper toxicity which can lead to jitters, shakes, and sleeplessness.
Dr Svetalana Kogan says that leafy greens such as kale loaded with copper, and an increase in vegetable-based diets may be contributing to copper overload. She further explains: “If you look for example at coconut and how big of a fad it’s become, it’s easy to see how it can contribute to copper toxicity. There’s coconut water, coconut oil, coconut chips. I love coconut and eat it too. But taking it to the extreme could be dangerous.”
